The Tom Collins is a Collins cocktail made from gin, lemon juice, sugar, and carbonated water. First memorialized in writing in 1876 by Jerry Thomas, "the father of American mixology", this "gin and sparkling lemonade" drink is typically served in a Collins glass over ice.

Santa Fe Tom Collins
Ingredients:
2 ounces gin
1 ounce freshly squeezed lemon juice
1 ounce simple syrup
2 cilantro sprigs
1 teaspoon chili powder
Club soda
Rim with Chili Lime Infused Salt
Garnish: Lime wheel or wedge
Directions:
Prepare your glass by rimming your glass. Swirl a lime wedge across the rim of the glass then spin the rim of your glass in a bowl or plate of your Chili Lime Infused Salt.
In a cocktail shaker, combine the chili powder, cilantro sprigs, lemon juice, simple syrup, and gin. Add ice and shake.
Strain the mixture into a rimmed collins glass filled with ice.
Top with club soda, and garnish with a lime wheel.
