"Fruity and refreshing!"
Made with a blend of pineapple and coconut juice - this recipe makes 2 drinks, but can easily be multiplied to make a pitcher for a party! If you can't find pineapple coconut juice you can make your own blend with half pineapple and half coconut juice.
Served best in a rocks or collins glass.
Pineapple Rum Punch
Ingredients:
2/3 cup pineapple coconut juice
1/4 cup gold rum
3 Tbsp lime juice
1/3 cup ginger ale , divided
Garnish: pineapple wedge
Garnish: pineapple leaf
Rim with Island Time Pineapple Infused Sugar
Directions:
Rim your glass by swirling a lemon wedge around top of your glass then spin the rim of your glass in your Island Time Pineapple Infused Sugar.
Add pineapple coconut juice, rum and lime juice to a small pitcher. Stir and chill.
Fill 2 rimmed glasses with ice cubes. Pour half the pitcher mixture into each glass and top each glass off with half of the ginger ale.
Garnish with a pineapple wedge and pineapple leaf.
Serve and enjoy!
