Peach Bellini



"Similar to a peach mimosa, the Bellini is not just for brunch, but a fun and fruity way to enjoy bubbles all day long."

The Bellini takes the mimosa up a notch. Using freshly pureed peaches and your favorite bubbly, this recipie tastes sophisticated and classy - even though it is simple to make and just uses two ingredients in the cocktail.


Recommended glassware: Champagne or coupe glass


Peach Bellini


Ingredients:

  • 1½ pounds ripe peaches*, about 4, peeled, pitted, and sliced (for the puree)

  • 4 ounces chilled Prosecco

  • Peach slices & fresh mint for garnish

  • Rim with Georgia Peach


Directions:


  1. Rim a glass by swirling a slice of peach around the top of your glass, then spin the rim in a bowl or plate of Georgia Peach.

  2. Make your peach puree: Puree peaches in a blender until smooth.

  3. Make each cocktail. Pour 2 ounces (¼ cup) peach puree into a champagne flute and top with prosecco. Stir gently to combine.

  4. Garnish with fresh peach slice & mint spring.

  5. Serve it up and enjoy it!
