Watermelon Gin and Tonic

These Watermelon Gin & Tonics are everything I want in a summer cocktail. Light, bright, slightly sweet, and featuring my all-time favorite part of summer: fresh watermelon. These are incredibly simple to make and are so refreshing! Perfect for hot summer days
Recommended glassware: Collins glass or Balloon glass
Ingredients

2 cups cubed watermelon (to make watermelon juice)

1 ½ oz watermelon juice

2 oz gin
-
3 oz tonic water
-
Juice of 1 lime

Ice
-
Garnish with fresh limes and watermelon

Rim with Salty Watermelon Infused Salt Rimmer
Directions
To make the Watermelon Juice
Place the cubed watermelon in a blender and blend until the watermelon is completely pureed and smooth.
Pour the mixture through a fine-mesh sieve set over a bowl or large measuring cup. Discard any pulp.
Store in the fridge until you are ready to use – it will keep in the fridge for a few days
To make the Watermelon Gin and Tonic
Rim a glass by swirling lime juice around the top of your glass, then spin the rim in a bowl or plate of Salty Watermelon.
Add ice to your rimmed glass.
Pour in the watermelon juice, the gin, the lime juice, and top everything off with the tonic water.
Garnish with fresh limes and watermelon slices.
Serve it up and enjoy!
