Watermelon Daiquiri

It's a rum drink for margarita lovers, with a salted rim that balances tart lime juice. Making your own fresh watermelon juice is best, but if you can find high end fresh juice - that would work too!

Ingredients

4 cups chopped seedless watermelon (about 1 pound)

5 tablespoons (2 1/2 ounces) white rum

1 tablespoon fresh lime juice
- ½ tablespoon agave nectar

1 cup ice

Directions
Rim a glass by swirling lime juice around the top of your glass, then spin the rim in a bowl or plate of Salty Watermelon.
Process chopped watermelon in a blender until smooth, about 30 seconds. Pour processed watermelon through a fine wire-mesh strainer into a medium bowl to yield 1 1/2 cups watermelon juice (enough for 8 cocktails). Discard solids. Chill juice until ready to make cocktails.
Add white rum, lime juice, agave nectar, and 3 tablespoons watermelon juice to a cocktail shaker filled three- fourths of the way with ice.
Cover and shake until very cold.
Strain into a rimmed glass with fresh ice. Garnish with a watermelon slice.
Serve it up and enjoy it!
